I'm the type of person who does what I say I'm gonna do, for the most part anyways. A couple of weeks ago I announced to the world that I was going to get over my fear of baking and take on the challenge. Okay, so maybe it wasn't announced to the world, more like my husband and a friend, but it was an important statement nonetheless. After revisiting this topic with said friend, she emailed me a recipe for peanut butter cookies. She said it was an easy recipe and impossible to mess up. Perfect for a novice baker!
I adapted the recipe by omitting the chocolate chips and using honey-sweetened smooth peanut butter instead of chunky. I liked that the recipe called for brown sugar instead of regular refined sugar. The brown sugar in my pantry was hard and I was too lazy to go buy another box. I threw the block of sugar in a food processor and ground it up. Now some of you may raise an eyebrow at this but the cookies tasted great so there you go. My husband ate most of them with a tall glass of cold milk. I was lucky to steal 2 or 3 from the plate before they were all gone.
Easy Peanut Butter Cookies adapted from epicurious.com
Ingredients:
1 cup chunky or smooth peanut butter
1 cup (packed) brown sugar
1 large egg
1 teaspoon baking soda
1/2 teaspoon vanilla extract
Preheat oven to 350°F.
Mix all ingredients together in a bowl. Using two spoons, form the dough into a ball, about the size of a tablespoon. Arrange on 2 baking sheets, spacing 2 inches apart.
Bake cookies until puffed, golden on bottom and still soft to touch in center, about 12 minutes. Cool on sheets 5 minutes. Transfer to racks and cool completely.

Thanks for the recipe. These look tasty and simple. I will defeintly try these!! Another quick method for softening brown sugar, depending how hard it is, is microwaving it for 30-60 seconds in a bowl with another small dish of water next to it.

Just make sure the cookie sheet is light, not dark. Otherwise you'll have peanut butter hockey pucks.
