Here is what I strive for every day. I want to spend the least amount of time in the kitchen and produce the most amount of flavor on my plate. The best way to do that, to my knowledge, is to use the freshest ingredients you can afford. For an easy dinner, that ingredient is usually fish.
Fish is not only a healthy option (if you haven't heard about omega-3 fatty acids and its benefits you're living under a rock) but it's one of those minimum effort-maximum flavor ingredients. And the winner in the category of "my favorite fish" is... Salmon! I could eat it poached, grilled, fried, smoked and, of course, absolutely raw. It has a rich flavor that needs little seasoning.
In this quick recipe, I've prepared it with basil-infused olive oil (last seen on my halibut). A bunch of fresh basil leaves, 1/3 cup olive oil, salt and pepper. Blend everything together and spread over 4 perfectly portioned salmon fillets. Wrap each fillet in parchment paper, place on baking sheet and broil in the oven for about 10 minutes. So easy and so tasty.
To accompany my basil salmon, I boiled some corn. I'm trying to stay away from butter (yeah, we'll see how long that lasts) so instead I topped the corn with a touch of salt and pepper, crumbled feta and a fresh squeeze of lime. The only thing that made the corn taste better was a sprinkling of chili powder.
I could probably forgo butter on just about anything, but not corn!
